COURSE CONTENTS
Lecture 1
1. 1. Carbohydrates:
Aldoses and Ketoses
· Understand
the distinction between aldoses and ketoses based on their functional groups.
· Explore
the structures and properties of both aldoses and ketoses.
2. 2. General Features and Configuration in Relation to Glyceraldehyde
· Identify
the general characteristics of carbohydrates.
· Explain
the significance of glyceraldehyde as a reference molecule for carbohydrate
configuration.
· Discuss
the stereochemical configurations of carbohydrates, such as D and L forms.
Lecture 2
3. 3. Aldohexoses: Structure and Chemical Reactions
· Focus
on six-carbon aldoses known as aldohexoses.
· Study
the structures and chemical reactions of aldohexoses, including oxidation,
reduction, and glycosidic bond formation.
4. 4. Disaccharides: Sucrose, Maltose, Lactose, etc.
· Examine
important disaccharides such as sucrose, maltose, and lactose.
· Understand
their structures, sources, and dietary significance.

5. 5. Polysaccharides: Starch, Cellulose, etc.
- · Explore
polysaccharides, which are complex carbohydrates composed of long chains of
monosaccharide units.
- · Study
the structures, functions, and importance of polysaccharides, including starch,
cellulose, and glycogen.
6. 6. Brewing:
· Touch
upon the brewing process, where complex carbohydrates are broken down into
simpler sugars during fermentation.
Course Goal:
To guide the students in learning the various concepts contained in the course contents and be able to solve problem related to the concepts with at least 95% proficiency.

Course Delivery Strategy
The course delivery system is composed of both theoretical and practice-based teaching.
· In class lectures and online supplement will be the major methods of course delivery for theoretical aspects.
· For practice-based teaching, students will be assigned into groups(5-10 in a group) with members of the group making a presentations of about 10 minutes each(including presentation and feedback time).
